My Mom's Easy Peasy Shepherd's Pie
As the mornings grow crisper, I yearn for warm comfort food from my moms kitchen. Now that I'm a mom, its those simple dishes that are cheap and quick to prepare that I seem to love the most. My moms Sheppard pie is one of them. Growing up, I hated ground beef, or any ground meet in ANYTHING..well besides shepherd's pie that is. Now, its a dish for weekdays in a hurry or weekends when you want to be lazy. Its perfect and balanced for people on a budget and light on dishes for those people like us without a dishwasher. Heres how to make it for your enjoyment:Ingredients:
- 1 lb lean ground beef
- 2 cups frozen veggies (I used the mixed bag with them cut up)
- 1 package of brown gravy mix (prepared using directions on back)
- 5 large potatoes (I use yellow because I they are better creamy)
- Butter and/or 1/2 cup sour cream (optional)
- Paprika (optional)
Directions:
- Turn oven to 350 degrees F
- Lightly cook ground beef in a skillet, adding in premixed gravy for the last 5mins
- While beef is cooking, peel, cut and boil potatoes in a saucepan
- When beef is fully cooked, place into a baking dish or dutch oven and mix in frozen vegetables
- Drain cooked potatoes and mash, adding sour cream or butter while mashing
- Spoon potatoes on top of beef mixture
- sprinkle with Paprika and bake in oven for about 30mins
